Question: need help with my truck

i drive a 2004 F150 FX4 5.4L V8. its sitting on a 3 inch leveling kit on 35x12.5 mud terrains. When i first bought the truck(a little over a year ago) it had 70,000 miles on it and drove perfectly. However, I took it through some pretty serious mud the first couple of months I had it. Once things started to break, i quit taking it. I've had everything fixed that has broke. I'm focused on getting my truck in tip top shape. After all the mudding i noticed that my throttle became less sensitive(problem number one). Also, during the period of offroading/mudding the clutch fan would come on and stay on all the time(problem number two). I've had it replaced 3 times. After the first replacement it didn't stay on all the time but still came on while driving or at a red light then would turn off a couple minutes later. the second replacement didn't do anything. The third replacement has fixed the problem only if i don't use my AC. But what is a truck without AC good for. Im desperate for help, any ideas or recommendations would be greatly appreciated.
